The Only Chia Seed Pudding Recipe You’ll Ever Need


Chia seeds have been used for centuries for their excellent health profile, but to some, how to use them is still a mystery.

If you’ve never used them in your own cooking before, these little seeds can look intimidating when you first purchase them. But they’re so easy and bring SO much to the table. 

For example, chia seeds…

  • Are packed with antioxidants
  • Contain Omega 3-6-9 fatty acids
  • Possess a high fiber content
  • Keep your heart and bones strong

Contrary to flax seeds, you can eat them whole, but I do suggest grinding them if you want to take more advantage of the healthy fats. These little seeds absorb any liquid you mix them with. Their texture is fun and tapioca-like – super versatile ingredient.

One of the easiest ways to incorporate chia seeds into your diet is with a fast and easy chia seed pudding! If you’re into planning your meals ahead of time, this is going to be a quick favorite— it’s so easy to prepare ahead of time so that whenever you need it, it’s ready to go. Just store it away in the fridge in a mason jar!

This is my personal favorite recipe, but feel free to change it up and add your own favorite fruits and spices!


Ready in  10 hours
Serves 4 people

Wet Ingredients

  • 2 Large Bananas, or 3 Small
  • 2 Eggs, large
  • 1/3 cup Maple Syrup
  • 1 cup Milk (or milk alternative)
  • 1 cup Plain Greek Yogurt (or alternative)
  • ¼ cup Maple syrup
  • ½  tsp Vanilla
  • 1 Mango

Dry Ingredients

  • 1 cup All Purpose Flour

  • ¼ cup Shredded coconut

  • ¼ cup Chia seeds



Preparation

  1. Peel and cut the mango in small pieces. Set aside.
  2. In a bowl, and using a whisk, mix the rest of the ingredients together.
  3. Then, separate the mixture into four containers.
  4. Add ¼ of the mango to each container.
  5. Place containers in the fridge overnight. Enjoy 🙂

Tips

  • Add ¼ cup granola to transform that snack into breakfast
  • Keep it seasonal and play around with the fruits and spices (i.e. apple & cinnamon, cocoa powder)
